Veg Manchurian

Veg Manchurian or Vegetable Manchurian is the ever popular Indo-Chinese dish prepared with a lot of vegetables. The best way to enjoy this dish is by deep frying the vegetable balls and simmering in a rich soy based gravy.

This is one of the most sought after fusion Indo-Chinese cuisine. The credit for this goes to the chinese immigrants who have diluted the chinese flavour to suit the Indian taste buds.This simple Veg Manchurian Recipe  is quite easy to make with the available vegetables at home with your own twist to suit your taste buds.

To save time, many of the times,I make the vegetable balls in advance and then deep-fry them when needed and add them in the Manchurian Gravy. If you want to avoid deep frying your vegetable balls, you can shallow fry them also. Besides the balls, the sauce is an important element of the dish which is so versatile that you can serve it as  a side dish to rice or noodles by adding some vegetables to it.

This can be served with fried rice, stir-fried noodles or chili garlic noodles or it can be made dry to be served as starters and gravy as side dish.Coming to the vegetables , I have used cabbage, carrots, beans , capsicum and onions to name a few, but you are free to have your own mix . To make a crispier vegetable balls , adding some rice flour along with cornflour is a smart way .

Instructions
  1. For the vegetable balls: Combine the cabbage, carrots, onions, cornflour, plain flour, garlic, green chilli, salt in a bowl and mix well using your hands.
  2. Shape spoonfuls of the mixture into small balls.Deep fry a few balls at a time in hot oil until golden brown. Drain on absorbent paper and keep aside.
  3. For the sauce: Heat the oil in a wok or frying pan on a high flame. Add the garlic, green chillies and ginger and stir fry over a high flame for a few seconds.
  4. Add the stock, soya sauce, cornflour paste, sugar and salt and simmer for a few minutes.
  5. Just before serving, put the vegetable balls in the sauce and bring to a boil. Serve hot.
  6. Garnish with spring onions and serve along with some fried rice.

  1. The recipe is not in very readable format. The commentary section is more than enough that’s posted before the actual recipe.
    Otherwise everything is great. Kudos to the photography.
