Paneer Makhni

Paneer Makhni is the  aromatic dish from the lap of Punjab, otherwise known as Butter Paneer , this dish which uses the most loved ingredient of the Punjabi people-BUTTER. Paneer Makhni literally means cottage cheese in a buttery sauce. Paneer means “cottage cheese” and makhni means “gravy made of butter ”.  This dish can brighten the simplest of the menu with it’s authentic punjabi flavor.

The Makhani Gravy is usually made up of pureed tomatoes, ginger, garlic, red chili powder and cream. Soft paneer chunks are added to the rich tomato based gravy. Paneer makhani gets a little bit of tangy taste from tomatoes and there are whole spices and garam masala in it .

You can find so many curry recipes related to paneer like Butter Paneer, Paneer Makhanwala, Paneer Butter Masala,   panner makhani and shahi paneer Some recipes are made with onion and some are without onion, some with yogurt base or some with cashew or cream base. Most of the recipes use the same method but different spices combination.

Instructions
  1. Chop the tomatoes and make a smooth puree in the blender. Keep Aside.
  2. Melt butter in a pan,add bay leaf and saute for a few seconds.
  3. Add the Ginger Garlic Paste and saute for a minute. Blend in the tomato puree and stir well.Add Chilli Powder and stir on a slow flame.
  4. Pour in some water,  green chillies, and ginger Julianne. Stir and let the tomatoes cook till the raw smell of the tomatoes disappear and oil starts to come out of the gravy.
  5. Add Paneer cubes, sugar,salt and crushed kasoori methi, half cup water and let them cook for a minute or two.
  6. Lastly add the fresh cream and gently stir.
  7. Garnish with fresh coriander and Serve Hot with Roti, Naan or Rice.
