Mushroom Cutlets

Mushrooms Cutlets is a perfect vegetarian snack and super easy to prepare. Mushrooms Cutlets are perfect for a tea time snack.You can also serve this cutlets in a burger or on a sandwich .

After a hectic week  at work, I feel like treating myself with these cutlets. These are made with boiled potatoes and spices. After which it is shaped in to cutlets, coated with a batter of all purpose flour and then breadcrumbs and deep fried.

I love having a cup of tea after coming back from office . It makes me feel refreshed and generally keeps me in happy zone. To keep my hunger pangs in check, I checked into the fridge and found, some mushrooms and boiled potatoes . I waste no time in deciding what to do with these two.  It reminded me of the mushroom cutlets which I have tasted at Puri.

Though I am not a person who loves fried stuff all the time, I never forget to treat myself with some Singada or Samosa, Cutlets, Omlette and a glass of tea. Sitting on the Puri sea beach till late in the evenings with cool breezes rejuvenates my mind . It such an easy thing to make and the wonderful aroma of these cutlets will drive you to have it more often in your menu.

You can serve it with home made mint chutney or tomato ketchup , but I prefer to have it with Kasundi dip.

Mushroom cutlets, is a healthy meat alternative and I am sure it is finger licking good.  You can never know, you are actually eating a veggie cutlet as it has a meaty texture. When it comes to mushrooms, I love almost all kinds of mushrooms, each one has its own characteristics and a distinct flavor. I love the incredibly soft texture of oyster mushrooms which we find it plenty here. You can use any mushroom for this recipe.

Instructions
  1. Remove skin, clean and boil potatoes. Once cool,mash well.keep aside.Clean and finely chop mushroom,chop green chili and chop onion.keep aside.
  2. heat oil in a pan,add coriander seeds, cumin seeds and fennel seeds. Once they crackle, add finely chop onion and saute until onion become soft. then add ginger garlic paste and chopped green chili saute well till raw smell goes. Add cumin powder, turmeric and saute well.
  3. Add finely chopped mushroom and green peas.saute in a high heat till mushroom become dry and cooked.add salt.reduce heat.
  4. now add boiled and mashed potato , and garam masala and amchoor powder,mix well and cook few minutes.check salt consistency and switch off the stove.let it cool. Add the chopped coriander leaves.
  5. make a thin paste of all purpose flour and water. keep aside.Now make small balls with it.place it in your palm and gently press it on top.make oblong shape cutlets. dip in batter and then coat the cutlets with breadcrumbs,repeat until all cutlet finished,keep each separately.
  6. heat oil in a vessel and deep fry the cutlets to a golden color serve hot with tomato ketchup or green chutney of your choice.
