Mexican Cuisine is a perfect combination of rich flavors, colorful ingredients and textures. For thousands years, corn has been the basis of Mexican cuisine. It’s presence is so predominant in Mexican Cuisine , that you will find it in the form of Tortillas( flatbreads), Pozole( Corn Stew), Soft and Crunchy corn taco shell, chalupa, Nachos to name a few. I like everything about Mexican Food, particularly the use of fruits and vegetables in their dishes like, tomatillos( green tomato), avocado, mango, pineapple, papaya along with the widely known chilies-the jalapeno which gives Mexican cuisine a distinctive flavor. The use of spices like cumin, cinnamon, cloves and herbs like cilantros enhances the flavor of Mexican dishes.

 

When you think of Mexican Cuisine, the first thing that comes to your mind is the crunchy taco shells filled with fresh lettuce, your favorite filling of meat, beans topped with spicy salsa, the soft Burritos wrapped with flavorful Mexican rice , Nacho Chips topped with cheese sauce and fresh salsa and of course the Zesty flavorful Mexican Rice. Though I have tasted many Mexican Dishes, I never had a chance to eat the Mexican Rice with all the seasonings and the tiniest hint of tomato flavor. This Mexican fried Rice made with fresh and cruncy vegetables, corn and a dash of cumin is quite easy to prepare and tastes delicious. This is one of the rice recipes which can be prepared with leftover rice. This rice can be served in two ways , if you like to keep it vegetarian, you can serve it like that, but if you prefer to make it non-veg, you can add meat, egg or ant sea food to it also.

Instructions
  1. Soak the dry red chillies in warm water for 10 minutes. Drain the water and grind along with the garlic cloves to a rough paste.
  2. Heat the oil in a on stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
  3. Add the prepared chilli-garlic paste, tomatoes and capsicum and sauté on a medium flame for 1 to 2 minutes.
  4. Add the salt and cumin powder and sauté on a medium flame for a minute. Add the mixed vegetables and mix well. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Make sure to check that the vegetables are cooked but retain it’s crunchiness. Add the shredded chicken and mix well.
  5. Add the rice, mix well and cook on for a minute and take out from Heat.
  6. Serve hot along with some sliced cucumber and tomatoes.

  1. I first learnt how to make Mexican rice through Tarla Dalal’s book. My family loved the rice and since then its a popular preparation in our family. As you mentioned love the taste of tomato in the rice. Also a great way to add loads of veggies.
