Banana Stem

The banana tree is one of those few plants where each part is used in some way or the other, be it the leaves, the fruits , the flower or the stem .Banana Stem consists of one-third edible vegetation and two-thirds water, but are a good source of fiber, potassium, phosphorus, B6 and calcium, as good as the banana fruit itself. Banana Stem can be cooked or consumed raw in juice form.

Banana Stem  is loaded with many medicinal properties which is helpful in weight management especially reducing belly fat, promotes healthy kidney functioning and also prevents acidity.
Preparation work for the banana stem is a bit tricky. What I do is after purchasing the banana stems from the market, remove the outer layer to get to the tender part.Peel the outer layers of the stem till the time you are not able to peel any more. Slice them into roundels and remove the fibre as you cut each roundel. Then chop them finely and keep them soaked in turmeric and salt water to avoid discoloration.

Ingredients :-
  • 1 cup Chopped Kadali Manja (Banana Stem)
  • 1 no. Chopped Potato
  • 1 no.Tomato
  • 2 nos.Green Chilly + 1 no slited for garnishing
  • 1 tbsp Mustard seeds
  • 2 tbsp grated coconut
  • 1 tsp turmeric powder
  • 1/2 tsp panch phutan
  • 2 tsp Mustard Oil + 1 tsp for garnishing
  • 1 tbsp chopped Coriander leaves
  • Salt as per taste
  • water as needed
Method :-
  • Make a paste of Mustard seeds, fresh grated coconut and green chili together.Keep aside.
  • Peel and chop the potato into tiny pieces and keep aside. Now the chop the tomato and keep aside.
  • Clean and cut the banana stem into thin circles. After cutting the first circle,move your index finger in a circular motion which will help you in removing as much fibre as possible.
  • Cut the circles into small pieces, add little salt and turmeric, mix and keep aside for half an hour.Now squeeze the excess water from the chopped banana stem (Manja) and add the mustard seeds paste, salt , 1 tsp mustard oil, chopped tomatoes, slit green chilly and mix it well. Keep it aside for 10 minutes.
  • Heat a pan with the oil. When it is hot, add the panch phutan  to this and when it start to splutters, add the chopped potatoes and cook till potatoes are a bit browned.
  • Now add the marinated banana stem to it. Sprinkle little water if required and cover it. Cook it in low flame for 20-30 minutes till it done. Stir it occasionally.
  • Switch off the flame and garnish with coriander leaves. Serve with steamed rice and enjoy it .

Instructions
